
The fermentation and pressing process leaves us with large volumes of grape skins. We could compost it, or feed it to Misty (she loves it!) – or we could take those skins and do something really creative with them.
Pino T is a unique and rather elegant tisane (tea without the tea). We sun-dry the skins on racks (with a little sulphur sprayed on to prevent any mould from growing), then send them away for blending with organic local and imported herbs, honey bush, vanilla, orange segments, hibiscus and rose petals!
The drink that results from adding hot water (just like making tea from tea leaves) is free from alcohol and caffeine, and rich in the powerful anti-oxidant Resveratrol. It’s delicious hot, but it’s just as nice sipped cold – in fact, Pino T is as refreshing (or better) after a hot day’s work on the farm as sport drinks.
